These vines are planted on the Northern side of Etna in the Calderara Sottana area. The blend is mostly made up of Carricante, with a smaller amount of Grecanico at some of the estates highest altitude vineyards up to 700 meters in elevation. The grapes are carefully sorted and have a quick maceration for 6-12 hours, before a spontaneous fermentation in concrete, with minimal use of sulphites. The wine matures on its lees for 10 months. There is a vibrant orange peel, citrus and wild herb character that is underpinned by a crisp and saline palate. This white is flinty with a slight wild side and has generosity and texture as well as the defined and classic minerality that you would expect for Etna.
